How to make a Carrot Cupcake recipe from scratch, with the help of this new video

I know that the carrot cake recipe that I’m sharing is a lot of fun, but the truth is, I actually can’t find a recipe for it online that is easy enough to make.

I mean, I know it’s super easy to make carrot cake and I know I can make it with all sorts of spices, but there’s no recipe that lets you just make the cake and it won’t be messy, or that’s going to taste good.

Luckily, this recipe is easy and you can make the carrot cupcake in a couple of minutes at home, and it’s the perfect cupcake to share with friends, family, and coworkers, too! 

You’ll need: 1 cup all-purpose flour 1 cup sugar 1/4 cup baking powder 1 teaspoon salt 1 cup milk (or 1 cup heavy whipping cream) 1 cup powdered sugar 2 cups chopped carrots 1 cup shredded carrots (I used a 1/2 cup carrot) 2 cups whole milk (I use a 2/3 cup milk) 1 teaspoon vanilla extract (optional) Directions: Preheat the oven to 350 degrees Fahrenheit.

Grease a 8-inch square cake pan or baking dish and set aside.

In a small bowl, combine flour, sugar, baking powder, salt, and milk.

Set aside.

Using an electric mixer or stand mixer, beat the butter and eggs until fluffy, about 1 minute.

Add the milk and beat until light and fluffy, 4-5 minutes.

Add powdered sugar, carrot, shredded carrots, and 1 cup of the dry mixture.

Beat until well combined.

Add remaining dry mixture and mix until well blended, about 2 minutes.

Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool on a wire rack before cutting into rounds. 

The carrot cake has a nice, chewy texture, and is super easy (and super healthy!) to make, especially if you make it ahead of time.

The carrots give it a light crunch and the carrot mixture gives it a fluffy texture. 

You can also use this recipe to make some other cake-inspired desserts: Cake Doughnuts, Oreo Cookies, Mango Mousse, Strawberry-Carrot Cake, and Lemon-Coconut Cake. 

I can’t recommend this recipe enough!
